Omi merchants’ meals were humble, which were mainly obtained from the locals. Vegetables from farms nearby and fish from Lake Biwa. “Local production for local consumption” is a foundation of the traditional food culture, which has passed down from the old to the new generation. The prominent traditional food is a fermented food, such as Carp sushi(Funazushi), miso, soy sauce and sake. The unity of the community has gradually shaped the culture, in which organic vegetables are frequently used.
Gokasho also takes pride in “Kawato” which is a waterway stemming from a clean stream and running through the town. The locals use the navigation underlining their houses when washing dishes and vegetables. They also keep carp for feeding with their food waste, such as cooked rice. This ancient wisdom is inspiring to help resolve our food problem.
Gokasho has a traditional motto, “Shimatsu shite kibaru.” “Shimatsu” means “Saving.” This town has enthusiastically tackled the problem of food loss with “Shimatsu” spirit
